- 2 Tbsps Oil
- 4 lamb shanks
- 2 tsps dried thyme
- 2 onions (sliced)
- 2 cloves garlic cloves (chopped)
- 4 Tbsps tomato puree
- 1 cup Red wine
- cilantro (to garnish)

Preparation steps
1.
Heat the oven to 180ºC (160º fan) 375ºF, gas 5.
2.
Heat the oil in a large ovenproof pot on the hob and brown the lamb shanks on all sides.
3.
Scatter over the thyme, onions and garlic and add the tomato puree and red wine. Bring to a boil then cover the pot and cook in the oven for 1 1/2 hours or until the meat is very tender and coming away from the bone.
4.
Season with salt and pepper and serve garnished with the cilantro.
