- ½ cup Margarine (softened)
- ½ cup caster sugar
- 2 large eggs
- 1 Tbsp Golden syrup
- 1 tsp ground ginger
- ground cinnamon
- salt
- ⅔ cup self-rising flour (sifted)
- 2 Tbsps butter (softened)
- 1 cup stem ginger (in syrup)

Preparation steps
1.
Preheat the oven to 150°C(130° fan)|300F|gas 2.
2.
Cream together the margarine and sugar in a mixing bowl until pale and smooth.
3.
Beat in the eggs, one by one, followed by the Golden Syrup, spices, salt, and flour. Beat well until the consistency of cake batter.
4.
Grease a 900 g | 2 lb pudding bowl with the butter. Remove the ginger from the syrup and chop.
5.
Spoon half of the ginger and its syrup into the base of the pudding bowl. Top with the batter.
6.
Smooth the top and loosely cover the bowl with a sheet of aluminium foil. Bake for 1 hour 15-20 minutes until a cake tester comes out clean the centre of the pudding.
7.
Remove to a wire rack to cool before turning out and serving with the rest of the crystallised ginger and syrup.
