- 1 Tbsp Orange juice
- 1 Tbsp soy sauce
- 1 tsp freshly grated ginger
- 1 Tbsp white wine vinegar
- 4 fresh Salmon fillet

1 Pot mit Deckel, 1 Pot, 1 Measuring cups, 1 Cutting board, 1 Wooden spoon, 1 Sieve, 1 Fine-mesh sieve, 1 Slotted spoon, 1 Ladle, 1 eventuell Salad spinner, 2 Kitchen towels, 4 canning jars (à 400 ml)
Preparation steps
1.
For the salmon: heat the oven to 200°C (180° fan) 400°F gas 6. Line a baking tray with non-stick baking paper.
2.
Whisk together the peanut butter, lemon and orange juices, soy sauce, ginger and vinegar until blended.
3.
Place the salmon fillets on the baking tray and season with salt and pepper.
4.
Spoon the peanut butter mixture over the fillets and bake for 12-15 minutes until the salmon is cooked through and the glaze is bubbling.
5.
Place each salmon fillet on a bowl of salad and sprinkle over the chopped peanuts. Garnish with coriander.
