150 grams Mozzarella
50 grams Parmesan
300 grams short grain rice
2 eggs
2 Tbsps butter
4 Tbsps breadcrumbs
2 Tbsps Pastry flour

Preparation steps

1.

Boil 0.5 liters (approximately 2 cups) of water and a pinch of salt to a boil. Add the rice and allow to swell over low heat, stirring frequently. Stir in the parmesan and leave to cool. Mix in 2 tablespoons of butter and 1 egg.

In a deep dish, mix 1 egg, salt and pepper.

Cut cheese into small cubes.

Shape about 10 balls the size of a tangerine from the cooled rice. Form a well in the center and fill with 1 tablespoon of cheese. Close the opening with rice. Roll the balls in flour and the egg mixture. Apply the breadcrumbs. Carefully place them on a towel.

5.

Heat the oil in a deep pan. Fry the rice balls. Drain on paper towel and serve with a tomato salad.
