- 200 grams Pastry flour
- 400 milliliters milk
- 3 eggs
- 1 Tbsp scallions
- 300 grams button Mushroom
- 300 grams carrots
- 1 stalk Leeks
- 2 Tbsps clarified butter
- salt
- freshly ground pepper peppers
- 300 grams Whipped cream
- 80 grams Mountain cheese (such as Gruyere)
- scallions (for garnish)
Preparation steps

Stir flour, milk, eggs, salt and chives into a smooth batter. Let rest for 20 minutes covered.

Rinse, clean and chop vegetables.

In a frying pan, heat clarified butter and successively fry 8 thin crepes. Fry vegetables in the remaining butter and season with salt and pepper to taste. Pour in 1/2 cup water, cover and cook for 5 minutes. Remove lid and season to taste. Spoon vegetables onto crepes, roll up and place in greased baking dish. Pour cream over rolls. Sprinkle with grated cheese and bake in center of oven preheated to 200°C (approximately 400°F) for about 10 to 15 minutes until golden. Garnish with chives.
