250 grams day-old White roll
100 grams streaky Bacon (smoked)
1 small onion
2 Tbsps parsley (freshly chopped)
150 milliliters milk
2 eggs
salt
peppers (freshly ground)
Nutmeg
breadcrumbs (as required)
1 ⅕ liters Beef broth
scallions

Preparation steps

Cut the bread rolls into cubes and place in a bowl.

Dice the bacon and put in a pan. Peel the onion, chop finely and add to the bacon. Saute the bacon and onion together until onion gets translucent. Stir in the parsley and add this mixture to the bread cubes; mix well. Pour the hot milk over it and mix well with the eggs. Mix in the nutmeg and season with salt and pepper. Let the mixture rest for about 20 minutes. If the mixture is too soft, add a little crumbs and mix.

Now with moistened hands, take out little mixture and form the dumplings. Place the dumplings in boiling salted water and leave only until done for 15-20 minutes. Remove the cooked dumplings with a slotted spoon and drain.

Place the dumplings on preheated deep plates and pour over the well flavored, boiled beef broth. Serve sprinkled with chopped chives and garnish as desired with fried bacon.
