2 tsps Maple syrup

Preparation steps

1.

Rinse and trim the snowpeas. Add to a steamer, and cook for 3-4 minutes, until al dente. Rinse under cold water, and drain thoroughly. Halve the avocados and remove the seeds. Peel the avocados, and thinly slice. Rinse the lemon in hot water and pat dry. Remove the zest from half of the lemon in strips. Thinly slice and set aside. Finely grate the zest from the remaining lemon half, then squeeze the juice from the lemon. Brush the avocado with a little of the lemon juice. Mix the remaining lemon juice, with the grated lemon zest, both mustards, the maple syrup, and the oil. Season to taste with salt and pepper.

Mix the snow peas and avocados, then drizzle with the dressing. Sprinkle with the thyme and reserved lemon zest, and serve.
