2 Oranges
1 white onion
2 Tbsps black Olives (pitted)
juice of a lemons
salt

Preparation steps

1.

Halve avocados, remove pits, scoop out flesh and cut into slices. With a sharp knife, remove peel and pith from oranges. Working over a bowl, cut between membranes to remove whole segments. Squeeze pulp over the bowl to extract any remaining juice. Peel onion and cut into very thin rings.

Cut olives into thin rings. Whisk orange juice and lemon juice and season with salt and pepper. Whisk in oil. Arrange avocado slices and oranges decoratively on plates, top with onion rings and olives and drizzle with dressing. Serve garnished with parsley.
