- 1 small organic Cucumber
- 1 Avocado
- 2 Tbsps lemon juice
- 1 small Leek
- 2 Tbsps drained, roasted peppers
- 1 sm jar Peaches
- 4 Tbsps olive oil
- 4 Tbsps white balsamic vinegar
- salt
- 250 grams Blue cheese

Preparation steps
1.
Rinse the cucumber, pat dry and cut into thin slices. Halve the avocado, remove the pit, cut into slices and remove the peel. Toss the avocado slices with lemon juice. Rinse the leeks and cut into thin rings. Drain the peppers. Drain the peaches and cut into thin strips. Mix everything together and toss with oil, vinegar and salt to taste. Crumble the cheese into small cubes, mix in and season.

Serve on plates.
