- 16 spears fresh, green Asparagus
- 1 Tbsp butter
- 1 small, green Bell pepper (rinsed; trimmed and cut into thin strips)
- ½ small, orange Bell pepper (rinsed; trimmed and cut into thin strips)
- ½ small, red Bell pepper (rinsed; trimmed and cut into thin strips)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 Tbsp lemon juice
- 4 Pita bread
- 4 slices grated Gouda
- ⅔ cup grated Gouda
Preparation steps

Preheat the oven to 425º F. Line a baking sheet with parchment paper.

Rinse the asparagus and trim tough ends. Heat a nonstick skillet over medium heat and melt the butter. Saute the asparagus for about 3 minutes, turning constantly. Add the peppers and cook 2 to 3 minutes longer. Season with salt and pepper and drizzle with lemon juice.

Cut the pita bread in half so that you have 8 rounds. Place the pita rounds on the prepared baking sheet. Arrange the asparagus, peppers and a slice of Gouda on 4 of the pita rounds. Sprinkle grated cheese on the tops of the remaining pita rounds.

Bake for about 5 minutes, or until the cheese is melted and the bread is golden brown. Cut in half with a sharp knife and serve.
