For the dough
1 ⅔ cups Brown rice flour
¾ cup Potato starch
¾ cup Tapioca starch
1 Tbsp xanthan gum
1 Tbsp quick-rising active dry yeast
3 Tbsps sugar (plus extra for sprinkling)
½ tsp salt
¼ cup dried Milk powder
1 tsp gluten-free Baking powder
¼ cup butter
½ cup water
¾ cup milk
1 large egg
1 tsp Cider vinegar
2 Tbsps sunflower oil
1 tsp vanilla extract
For the filling
2 Tbsps butter
½ cup light brown sugar
1 Tbsp ground cinnamon
½ cup chopped almonds
To finish

Preparation steps

1.
Butter a 23cm|9" round tin.

For the dough: mix together all the dry ingredients until combined. Set aside.

Heat together the butter and water in a pan until the butter has melted. Remove from the heat and stir in the milk.

Whisk in the egg, vinegar, oil and vanilla until combined.
5.
Pour the wet ingredients into the dry ingredients and mix well until blended. Shape into a ball.

Take a large sheet of non-stick baking paper and sprinkle the paper with 1-2 tablespoons of sugar.

Place the dough on the paper and cover with another sheet of non-stick baking paper. Pat the dough into a rectangle, then roll out to approximately 20cm x 15cm| 8? x 16?.

For the filling: beat the butter until very soft, then beat in the remaining ingredients until blended.
9.
Remove the top sheet of paper and spread the filling evenly across the dough, leaving 3cm|1 1/2? along one long end without any filling.
10.
Starting along the long end, that has filling on it, use the sheet of baking paper to lift the edge of the dough and roll it up, forming a long cylinder.
11.
Cut the cylinder into 8 pieces. Arrange the rolls next to each other in the tin, cut side up.
12.
Cover with oiled cling film and leave to rise in a warm place for about 30 minutes, until nearly doubled in size.
13.
Heat the oven to 180°C (160° fan) 350°F gas 4.
14.
Bake for 20-25 minutes, until the tops are golden brown. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
15.
Sift over a little icing sugar just before serving.
