2 ozs Walnut
7 ozs Arugula
3 slices Baguette
1 Tbsp olive oil
2 Pear
4 ozs Gorgonzola
1 garlic clove
1 tsp honey
2 Tbsps apple cider vinegar
2 Tbsps Walnut oil
salt
freshly ground peppers

Preparation steps

Toast nuts briefly in a frying pan and let cool. Rinse arugula, spin dry and place on a large plate. Crisp bread in a pan with hot olive oil and then cut into bite-size pieces. Rinse pears, cut in half, core and cut into strips. Spread pears over the arugula and top with bread and coarsely chopped nuts. Add about 2/3 of the crumbled cheese. Take remaining cheese and add peeled garlic clove, honey, vinegar and 1 to 2 tablespoons water. Drizzle in oil and purée mixture. Season with salt and pepper to taste. Drizzle dressing over salad prior to serving.
