¼ teaspoon Cumin
¼ teaspoon fresh ginger
2 tablespoons grapeseed oil
1 small shallot (minced)
kosher salt (to taste)
freshly ground Black pepper (to taste)
16 ounces Brussels sprouts (halved and lightly sauteed)
2 ½ ounces Arugula
2 Radicchio (shredded)

Preparation steps

In a small bowl, whisk together the vinegar, cumin, ginger, oil, shallot. salt, and pepper.

In a large mixing bowl, add the Brussels sprouts, arugula, and radicchio and toss. Pour the dressing over and toss again until well coated.
3.
Portion onto individual plates and serve with homemade croutons.
