8 Artichoke
lemons
150 grams lean, smoked Bacon (without rind)
3 garlic cloves
3 sprigs mint
freshly ground Black pepper
salt
2 Tbsps finely chopped parsley
70 milliliters olive oil

Preparation steps

1.

Rinse artichokes.

In a bowl, mix lemon juice with about 1.5 liters (approximately 6 1/3 cups) cold water.

Remove tough outer leaves of artichokes, and snip tips of remaining leaves with scissors. Trim stalk.

4.

Remove choke with a spoon and place artichokes in the lemon water.

Finely chop bacon and cook in a pan over high heat. Peel garlic, press through a garlic press into the pan and cook until translucent. Remove and set aside. Rinse mint, shake dry, finely chop leaves, mix with bacon and season with pepper.

Remove artichokes from water and shake dry.

Bend leaves away from center slightly and sprinkle with bacon mixture. Place artichokes in a pot and sprinkle with salt and parsley.

8.

Drizzle with oil. Cover and simmer over medium heat, about 10 minutes. Pour in a cup of hot water, cover again and simmer about 20 minutes more.
