- 250 grams Pastry flour
- 2 tsps Baking powder
- 1 pinch cinnamon
- 1 egg
- 125 grams sugar
- 1 pinch salt
- 80 milliliters sunflower oil
- 250 milliliters Buttermilk
- 1 Apple
- 1 Tbsp lemon juice
- Pastry flour (for dusting)
- 80 grams Almond slivers

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line the cups of a muffin tin with paper cups.

Mix together the flour, baking powder and cinnamon. Whisk together the egg, sugar, salt, oil and buttermilk. Pour the wet ingredients into the flour mixture and stir until just combined. Rinse the apple, quarter, core and cut crosswise into thin slices. Toss immediately with a little lemon juice, lightly sprinkle with flour and fold into the batter. Pour batter into the prepared muffin tin and sprinkle with the almonds. Bake for about 25 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven, let cool and serve.
