Small, fine and simple: this apple pie is also an eye-catcher without much effort and perfect for a smaller coffee table. The apples provide plenty of immune-strengthening vitamin C and the fibre pectin, which makes the digestion especially happy.
Would you like to add more spice to your apple pie? Try freshly chopped hazelnuts as a topping just before serving. Or do without the icing and refine your cake with some whipped cream!

- 500 grams Apple
- 2 Tbsps lemon juice
- 4 Tbsps Apfelkorn (sweet apple-flavored liqueur)
- 1 Tbsp honey
- 120 grams butter
- 120 grams sugar
- 1 packet Vanilla sugar
- ½ lemon (zested)
- 3 eggs
- 250 grams Pastry flour
- 1 tsp Baking powder
- 6 Tbsps milk
- butter (for the baking panpan)
- 100 grams powdered sugar
Preparation steps
Peel the apples, cut into quarters, remove the core and halve quarters again. Toss the apples with lemon juice, brandy and honey. Cover and let sit for half an hour.
Cream butter until fluffy. Add sugar, lemon zest, eggs and vanilla sugar and continue to cream until light and fluffy. Combine the flour and baking powder and stir alternately with the milk into the batter. Butter the baking pan and dust with flour. Evenly spread the batter into the baking pan.
Arrange the apple slices on the batter and bake in an oven preheated to 175°C (approximately 350°F) for 50 minutes. Loosen the mold and allow to cool.
Mix the powdered sugar with 2 tablespoons of water until smooth. Drizzle over the cake decoratively. Let set before serving.
