- 400 grams Pumpkin (peeled and seeded)
- 2 Apple
- 150 milliliters Coconut milk
- 1 pinch cinnamon
- 40 grams Shredded coconut
- 4 Tbsps honey
- 2 centiliters Almond liqueur
- 2 Tbsps lemon juice
- Amaretti cookies (for garnish)

Preparation steps

Cut the pumpkin into cubes. Peel the apples, cut into quarters, remove the core and then cut into cubes.

In a saucepan, boil coconut milk with cinnamon, honey and lemon juice. Add the apple and pumpkin, and cook covered for about 10 minutes until soft. When done, make a puree of all the ingredients. Add extra coconut milk depending on the consistency.

Stir in the shredded coconut and almond liqueur into the puree and transfer to a pastry bag. Pipe the mixture into the glasses. Serve lukewarm or cold with small amaretto macaroons.
