- ⅜ cup Crème fraiche
- 2 Tbsps Vanilla sugar
- lemon zest
- 10 ozs Puff pastry (ready-rolled)
- 4 Tbsps milk
- 4 Tbsps coarse brown sugar

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.
2.
Cut the apples into quarters, remove the core and finely slice. Mix immediately with lemon juice to prevent browning.

Whisk together the crème fraîche, vanilla sugar and a pinch of lemon zest.
4.
Unroll the pastry and cut into 8 squares, approx. 10x10 cm. Spread 1-2 tbsp of crème fraîche mixture over the centre and top with apple slices.
5.
Fold two corners of each pastry square into the centre to make a lozenge shape. Press the corners together well. Brush with milk, sprinkle with sugar and place on the baking tray. Bake in the oven for around 15 minutes until golden brown.
