- ⅜ cup honey
- 1 cup Apple juice
- 1 tsp vanilla extract (plus extra for the cream)
- 1 unwaxed lemon (finely grated zest)
- 4 Apple (peeled, cored and thickly sliced)
- 1 ¾ cups sugar-free gluten-free ginger biscuit crumbs (cookie crumbs)
- 3 ½ cups canned Coconut milk (chilled)
- 1 pinch salt

Preparation steps
1.
Put the honey, apple juice and vanilla in a pan over a low heat, stirring until dissolved.

Add the apples and bring to a simmer. Cover and cook for 5-10 minutes until the fruit is tender but still whole. Stir in the lemon zest and set aside to cool completely.
3.
Scoop the layer of fatty cream off the top of the coconut milk (you won't need the liquid)and put into a chilled bowl.

Whisk well for 1-2 minutes, then add a few drops of vanilla extract and the salt. Whisk again until light and fluffy.
5.
Layer the apples, coconut cream and biscuit crumbs in serving glasses. Serve chilled.
