Remove the stamens from the flowers. Carefully shake out the flowers and wash them. Dry well.
Mix together the onion, tomato passata, rice and the oil and season with salt and ground black pepper. Carefully transfer the mixture into the flowers. Twist the tips of the flowers together and place closely next to each other in a pot.
Add just enough water to cover the flowers and cook on a medium heat for 25-30 min. Remove from the pot and serve on a platter.
