- 1 onion (diced)
- 2 cloves garlic cloves (diced)
- 2 Zucchini (chopped)
- 1 cup floury potatoes (chopped)
- 2 Tbsps olive oil
- ⅔ cup dry white wine
- 3 cups Meat stock
- ½ cup Crème fraiche (or crème légère)
- 1 handful parsley (finely chopped, 2 tbsp set aside to garnish)
- 1 Tbsp lemon juice
- 1 cup Chorizo (sliced)
Preparation steps

Fry the onion, garlic, courgette and potatoes in 1 tbsp oil. Deglaze with the wine and the stock and simmer for around 15 minutes.

Fry the chorizo in the remaining oil and pat dry with kitchen paper.

Add the crème fraîche and the parsley to the soup and purée well. Bring to the boil and either add a little more stock or simmer for a while longer to achieve the desired consistency. Season to taste with salt, ground black pepper and lemon juice.

Transfer to soup cups and served garnished with the chorizo and the remaining parsley. Serve with butter bread.
