- 1 cup all-purpose flour
- ¾ tsp Baking powder
- ¾ Tbsp freshly grated ginger
- ½ Tbsp vanilla extract
- ½ tsp salt
- ½ cup unsalted butter (softened)
- ½ cup cream cheese
- 1 ¼ cups sugar
- 3 eggs
- ½ Tbsp freshly grated lemon zest

Preparation steps

Preheat oven to 325º F / 175º C. Line a loaf pan.

Combine flour, baking powder, ginger, vanilla and salt in a medium bowl and whisk until incorporated.

In a separate bowl, beat butter, cream cheese, and sugar until fluffy, about 3 minutes. Add eggs one at a time, mixing after each addition and scraping down sides of bowl as necessary. Add lemon zest. On low speed, gradually add the flour until mixed well.
4.
Pour batter into prepared pan and bake until cake is golden, 55 to 65 minutes, or until toothpick comes out clean. Cool cake in pan for 15 minutes, then invert onto a cooling rack and cool completely before slicing.
