- 2 ½ ozs fresh ginger
- 2 Tbsps soft brown sugar
- 1 large lemon (halved)
- 2 cups Sparkling mineral water
- 1 handful Ice
- To garnish
- 2 sprigs fresh mint

Preparation steps
1.
Coarsley grate the ginger, leaving the skin on.
2.
Put the ginger with its pulpy juice into a jug and sprinkle in the sugar.
3.
Squeeze the lemons and remove lemon zest with a vegetable peeler.
4.
Add the zest to the jug and squash with a pestle or a rolling pin.
5.
Add the lemon juice. Pour in the sparkling water.
6.
Allow to sit for 10 minutes and then taste. Add a little more sugar, if you like.
7.
Strain the ginger beer through a sieve into a jug.
8.
Serve in 2 glasses with ice and garnish each one with a sprigs of mint.
