600 grams Hare meat (boneless)
50 grams raw ham
2 onions
1 carrot
2 stalks Celery
3 Tbsps olive oil
250 milliliters Game stock
300 milliliters Red wine
1 Tbsp Tomato paste
Nutmeg
¼ tsp Ground clove
1 tsp thyme (dried)
salt
freshly ground peppers
400 grams Pappardelle noodles

Preparation steps

1.

Cut hare meat and ham into small cubes.

2.

Peel onion and carrot, atrim as needed and cut into small cubes. Rinse celery, trim as needed and cut into small cubes.

3.

Heat olive oil in a saucepan and then sauté onion and diced ham together. Add prepared vegetables fry briefly, then add broth and red wine, stir in tomato paste, add hare meat and spices. Cover and simmer for about 1 1/2 hours and season to taste with salt and pepper.

4.

Cook pasta in a pot with plenty of salted water according to the package directions until al dente and then drain. Add pasta to the saucepan and mix with the sauce. Serve immediately.
