- 3 handfuls mixed Wild herb salad (such as Sorrel, marigold, dandelion, Pansy, Yarrow, Watercress)
- 2 Tbsps White vinegar
- 4 Tbsps olive oil
- salt
- peppers (from the mill)
- sugar

Preparation steps

Rinse the greens and spin dry.

Mix about 500-600 ml (approximately 17-20 ounces) of water with some of the herbs and edible flowers, put in a salad bowl (26 cm diameter, approximately 10 inches), then gently place a smaller bowl to float inside (22 cm diameter, approximately 8 1/2 inches), so the salad water rises up to the top of the bowl. Carefully put in the freezer and leave to set.

Meanwhile, for the vinaigrette: mix the vinegar with the oil and season with salt, pepper and a pinch of sugar.

Take the bowls from the freezer, briefly dip in hot water and remove the frozen ice bowl carefully. Stand it upright, toss the salad with the vinaigrette, arrange in the ice bowl and serve immediately.
