1 whole, roasting chicken (about 1.5 kg)
1 yellow onion (peeled and scored)
1 rib Celery (rinsed and trimmed)
2 Tbsps olive oil
salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

Preheat the oven to 400ºF / 200ºC.

Remove the giblets and neck from the chicken cavity. Rinse the chicken inside and out under cold running water and pat dry with absorbent paper towels. Place the onion and celery in the chicken cavity. Coat the chicken with olive oil and season inside and out with salt and pepper. Place the chicken in a Dutch oven or a 13 x 9-inch / 33 x 23 cm roasting pan. Bake for 40 minutes.

Meanwhile, prick each sweet potato several times with the tines of a fork. Microwave on HIGH for 2 minutes. Cut into pieces, toss with Italian dressing and season to taste with salt and pepper.

After 40 minutes, add potatoes to the Dutch oven or roasting pan with the chicken. Bake for an additional 35 minutes or until the chicken is done (165ºF using an instant read thermometer) and potatoes are tender. Serve.
