2 Avocados (thickly sliced)

12 slices fatty Bacon (streaky, American)
1 cup Pine nuts
4 Tbsps olive oil
2 Tbsps balsamic vinegar
3 tsps Dijon mustard

Preparation steps

1.
Divide the spinach and avocado between 4 serving plates and season to taste with salt and pepper.
2.
Fry the bacon in a frying pan until crisp and brown. Add the pine nuts to the pan and gently toast until lightly browned.
3.
Pour off all but 1 tablespoon of bacon fat from the pan, reduce the heat and add the olive oil and gently warm through.
4.
Remove from the heat and whisk in the vinegar and mustard until thickened.
5.
Top the salads with the bacon and pine nuts and drizzle with the warm dressing. Serve immediately.
