- 1 onion (finely chopped)
- 32 ozs Cauliflower
- 4 cups vegetable stock
- ⅔ cup cream (48% fat)
- salt
- peppers
- To garnish
- snipped Chives
- 4 Tbsps Crème fraiche

Preparation steps
1.
Heat the oil in a large pan and cook the onion over a low heat for 2-3 minutes until just softened.

Add the cauliflower and stock and bring to a boil.

Reduce the heat and simmer for 10-15 minutes, until the cauliflower is tender. Remove from the heat and allow to cool slightly. Reserve some florets for the garnish.
4.
Blend the soup in batches in a food processor or blender until almost, but not completely smooth, then return to the pan and stir in the cream. Season with salt and pepper and reheat gently until piping hot, but do not boil.
5.
Pour into warm serving bowls and garnish with the reserved florets, snipped chives and a spoonful of creme fraiche. Serve with crusy bread.
