- 14 ozs Spaghetti
- salt
- 4 ½ ozs carrots
- ½ red Bell pepper
- ½ orange or yellow Bell pepper
- ½ green Bell pepper
- 2 ½ cups Mushrooms
- 1 onion
- 2 cloves garlic cloves
- 2 Tbsps lemon juice
- freshly ground Black pepper
- 4 Tbsps Vegetable broth
- ½ cup grated Parmesan
- Basil (to garnish)
- 3 Tbsps sesame oil
Preparation steps

Peel the carrot and cut into thin sticks. Wash the bell peppers, de-seed and cut into strips. Peel and finely chop the onion and the garlic.

Clean the mushrooms and cut into slices.

Cook the spaghetti in boiling, salted water until al dente. Fry the onion and the garlic in one tablespoon of hot oil until soft. Remove from the skillet.

Fry the mushrooms in one tablespoon of hot oil, then remove from the skillet. Sauté the carrots and the bell peppers in the remaining oil, then add the onions and the mushrooms and stir. Season to taste with lemon juice, salt and pepper.

Pour in the vegetable broth and simmer. Season to taste. Drain the spaghetti, then carefully stir in with the vegetables and place on warmed plates. Sprinkle freshly grated parmesan cheese over the top, garnish with basil and serve.
