- Ingredients
- 3 Tbsps unsalted butter
- 2 Tbsps olive oil
- 5 shallots (halved lengthwise)
- 2 cloves garlic cloves (finely diced)
- 8 ozs crimini Mushrooms (cleaned and quartered)
- 2 Tbsps dry sherry (cooking wine)
- ¼ cup shredded Parmigiano Reggiano
- ½ tsp salt
- ½ tsp peppers
- 16 ozs Spaghetti
- ¼ cup Pasta water
Preparation steps
1.
Begin by bringing a large pot of salted water to a boil.
2.
As this takes time to come to a boil, get a skillet ready, and on medium heat, add in the olive oil and 2 tbsp of the butter, and let it melt down. Add in the shallots, garlic, and mushrooms. Cook on medium heat for about 5 minutes, turn up the heat, and add in the sherry wine.
3.
Let this cook and reduce the heat to low. Add in the cheese and season with salt and pepper.
4.
Once the salted water has came to a boil, add in the pasta and cook until al dente. A few minutes for fresh pasta, and 9-11 minutes for boxed pasta. Once the pasta is cooked, drain the pasta.
5.
To a large bowl, add the mushroom and shallot mixture, add the pasta on top, the pasta water, and one tbsp of butter. Serve the pasta on a plate with a big spoonful of the mushroom shallot mixture on top and enjoy.
