30 grams fresh ginger
2 Vanilla bean
70 milliliters Canola oil
450 grams skinless, boneless Swordfish fillet
3 Red onions

Preparation steps

Peel the ginger and grate finely. Cut the vanilla beans in half lengthwise and scrape out the seeds. Mix the ginger and vanilla bean seeds with 50 ml (approximately 1/4 cup) of vegetable oil and let sit overnight.

The next day, rinse the swordfish fillets and pat dry. Peel the red onion, cut into quarters and separate the layers. Cut the swordfish into cubes. Slide the swordfish onto skewers alternately with the onion pieces. Brush liberally with the vanilla oil and let marinate in the refrigerator for about 20 minutes.

Heat a grill or grill pan and cook the skewers for about 5-7 minutes, turning once. Transfer to a serving platter, sprinkle with chopped dill and garnish with pink peppercorns and lemon slices.
