- 350 grams Udon Noodle
- 2 carrots
- 40 grams Shelled peanut
- 1 red chili pepper
- 1 garlic clove
- 1 centimeter ginger
- 4 Tbsps soy sauce
- 1 tsp honey
- 4 Tbsps Rice wine
- 2 sprigs cilantro
- 1 Tbsp Sesame seeds

Preparation steps
1.
Cook the udon noodles accroding to the package directions, then rinse and drain well.

Peel and julienne the carrots lengthwise (preferably with a vegetable peeler). Chop the peanuts. Rinse and trim the chili. Halve lengthwise and julienne.

For the dressing, peel and finely chop the garlic and ginger. Mix both with the soy sauce, honey, and rice wine vinegar and stir until combined.
4.
Rinse the cilantro, pat dry, and remove the leaves. Mix the udon noodles with the carrots, peanuts, and the dressing. Toss to combine, sprinkle with the sesame seeds and the cilantro, and serve.
