250 grams Udon Noodle
200 grams Pork
200 grams fresh Spinach
150 grams soybean sprout
1 small Cucumber
2 sprigs Lemongrass
2 Red chili peppers
1 green chili pepper
2 cloves garlic cloves
2 shallots
1 pc fresh ginger (about 2 cm)
6 Tbsps vegetable oil
2 Tbsps soy sauce
salt

Preparation steps

Bring a pot of lightly salted water to a boil, add udon noodles, return to a boil and remove from heat. Cover pot with a lid and let stand 4 minutes. Drain through a sieve. Cut the pork into thin strips and marinate in some of the soy sauce. Trim spinach, rinse and spin dry. Tear larger leaves in half.

Rinse the cucumber, cut in half, remove seeds and cut into thin slices. Rinse lemongrass, cut off top and bottom ends and finely chop the tender inner portion. Rinse the chile peppers, cut in half, remove seeds and cut into narrow strips. Peel and press garlic. Peel ginger and finely chop. Peel shallots and cut into small cubes.

Heat the oil in a wok or deep frying pan and stir-fry the pork with the bean sprouts over high heat. Add lemongrass, chile peppers, garlic, shallots and ginger and stir-fry briefly. Add the cucumber and stir-fry everything 1 minute. Add the spinach and cook while stirring until wilted. Add the noodles and mix well. Season with salt and remaining soy sauce and serve immediately.
