- 4 egg whites
- 1 pinch salt
- 1 cup sugar
- 1 tsp vanilla extract
- 2 ½ cups ground almonds
- 3 Tbsps Corn starch
- 2 Tbsps cocoa powder
- For the filling
- 1 Tbsp cream (40% fat)
- 1 Tbsp Vanilla liqueur
- 2 cups powdered sugar

Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2. Line a baking tray with non-stick baking paper.
2.
Whisk the egg whites with the salt and sugar until stiff and shiny.
3.
Fold in the ground almonds and cornflour. Spoon half the mixture into another bowl.
4.
Sift the cocoa powder into 1 bowl. Spoon the mixtures into separate piping bags.
5.
Pipe rounds, about 1,5-2 cm in diameter on the baking tray.
6.
Bake for 25-30 minutes, until firm and crisp. Place on a wire rack to cool.
7.
For the filling: beat the cream with the vanilla liqueur and sift in the icing sugar until smooth and thick. Spread on half the macaroons and place another macaroon on top.
