2 cups all-purpose flour
cup caster sugar
0.333 cup dairy-free margarine
4 eggs
2 ½ cups Shredded coconut
1.333 cups Raspberry jam
¼ cup caster sugar (for topping)
0.333 cup dark dairy-free chocolate (70% cocoa solids, melted)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease an 18 x 28cm|7" x 11" baking tin.

Place the flour, 110g|4 oz sugar and margarine in a food processor and process until the mixture resembles fine breadcrumbs. Add 1 egg and process until well combined.
3.
Press the mixture evenly over the base of the tin and bake for 10 minutes, until just beginning to brown. Remove from the oven and set aside.

Reduce the oven temperature to 170°C (150° fan) 325°F gas 3.
5.
Whisk the remaining eggs lightly. Add the coconut and remaining sugar and mix with a fork until well combined, then mix in the chocolate.
6.
Spread the jam evenly over the base. Spoon the coconut mixture on top and gently press down. Bake for 20 minutes until the cake is cooked through. Cool in the tin.
7.
Cut into squares to serve.
