18 ozs turkey breasts
5 Tbsps Oil
1 shallot (finely chopped)
2 egg yolks
2 Tbsps parsley (finely chopped)
2 carrots
2 Zucchini
2 cups white Radish
2 Bell pepper
2 Tbsps butter
salt
peppers (freshly ground)
lemons (to garnish)
parsley (to garnish)

Preparation steps

1.
Wash and prepare the vegetables. Peel the carrots and radish and cut into sticks. Cut the courgettes into sticks. Halve and core the peppers and cut into strips.
2.
Blanch the carrots and radishes in boiling, salted water for 1-2 minutes. Then add the courgettes and peppers and blanch for a further minute. Drain, refresh in cold water and drain well.

Heat 1 tbsp oil and sweat the shallot until translucent. Chop the turkey finely in a food processor and mix with the shallot, egg yolks and parsley. Season with salt and pepper and form into small patties. Heat the rest of the oil and fry the patties for about 2 minutes each side. (You will probably need to do this in batches).
4.
Melt the butter and toss the vegetables in the melted butter. Season with salt and serve with the turkey patties. Serve garnished with lemon slices and parsley.
