200 grams fresh Spinach
1 onion
2 garlic cloves
1 Tbsp butter
1 Tbsp white wine
salt
peppers
ground Nutmeg
4 Turkey cutlets (approximately 140 grams or 5 ounces)

150 grams Gorgonzola
3 Tbsps clarified butter

Preparation steps

1.

Rinse and spin dry spinach. Peel and mince onion and garlic. Melt butter in a pan and cook onion and garlic until soft. Add spinach, deglaze with wine and season with salt, pepper and nutmeg. Cook for 2 minutes, then let cool.

Rinse turkey, pat dry, flatten and season with salt, pepper and paprika. Mash Gorgonzola with a fork. Spread spinach and Gorgonzola onto turkey and fold up. Secure with roulade pins. Heat butter in a pan and add turkey cutlets. Cook for 5-7 minutes on all sides.

3.

Serve roulades with noodles.
