- 2 large, ripe Tomatoes (washed, halved and seeded)
- 1 cup canned Tuna (drained and flaked)
- 2 scallions (washed and chopped)
- 3 sprigs Tarragon
- 1 tsp Caper
- salt (to taste)
- peppers (to taste)
- Mayonnaise (to moisten)

Preparation steps

Preheat broiler

Cut tomato in half. Scoop out pulp and seeds. In a bowl, combine the remaining ingredients. Fill tomatoes with the tuna mixture.

Place tomatoes on a baking sheet. Broil 4-inches from the heat element for about 5 minutes. Do not burn.

Serve immediately.
