- 14 ozs Pappardelle noodles
- ¼ cup olive oil
- 2 shallots (finely chopped)
- 1 clove garlic cloves (crushed)
- 1 tsp Anchovy paste (optional)
- 14 ozs canned Tomatoes
- 7 ozs canned Tuna (in oil)
- salt
- freshly ground Black pepper
- 1 Tbsp finely chopped parsley

Preparation steps
1.
Cook the pappardelle in a large pan of boiling salted water according to the packet instructions, until tender. Drain well.
2.
Heat the olive oil in a large shallow pan and cook the shallot and garlic until soft, but not browned. Stir in the anchovy paste, if using and the tomatoes.
3.
Stir well and cook for 5 minutes. Season to taste with salt and pepper.
4.
Add the tuna and stir to break up the fish. Simmer for 10 minutes.
5.
Remove from the heat and stir into the drained pappardelle with the parsley. Sprinkle with a little black pepper.
