- 2 Tbsps olive oil
- 400 milliliters Tomato juice
- 600 milliliters Orange juice
- 2 tsps cornstarch
- 1 sm piece ginger
- 2 garlic cloves
- 2 Oranges
- salt
- freshly ground peppers
- parsley

Preparation steps
1.
Sauté the chopped shallots in 1 tablespoon oil, pour in the tomato juice and bring to a boil.
2.
Stir the orange juice with the cornstarch until smooth, add to the tomato juice, simmer for 2 hours and season with salt and pepper. Peel the ginger, finely chop and saute in the remaining oil. Peel the garlic and squeeze through a garlic press.
3.
Peel the oranges, slice, chop and add to the soup. Pour the soup into bowls and sprinkle with parsley leaves. Serve with white bread.
