For Beef Roulades
4 slices Beef (pounded 1/4 inch thick or sliced thinly by butcher)
2 Tbsps Mustard
salt (to taste)
peppers (to taste)
8 slices Bacon
4 large Dill Pickle (sliced thinly)
1 medium onion
2 Tbsps butter
For Sauce
1 onion (chopped)
1 red chili pepper (deseeded; chopped)
1 Tbsp tomato puree
4 cups canned Tomatoes
salt (to taste)
peppers (to taste)
fresh Basil (garnish)

Preparation steps

Dry the beef slices, brush each slice of beef lightly with mustard and season with salt and pepper. Place 2 slices of bacon, a layer of sliced pickle and sliced onion on each piece of beef. Beginning with the narrow end of the beef, roll the meat up tightly and secure with a wooden toothpick, skewer or kitchen twine.

Melt butter in the bottom of the pressure cooker add the chopped onion, chili pepper and sear the roulades on all sides. Add tomato puree, chopped tomatoes, and seasoning.

Close and seal the pressure cooker according to the directions. Cook per manufacturers instructions (approximately 15-20 minutes). Cool down the pressure cooking before opening.

Transfer to a serving dish, spoon sauce over roulades, and garnish with fresh basil. Serve.
