2 cups fresh Basil (packed and chopped)
0.333 cup toasted Pine nuts
cup extra virgin olive oil (divided)
½ cup grated Parmesan (plus extra to serve)
3 cloves garlic cloves (pressed)
kosher salt (or sea salt)
freshly ground Black pepper (to taste)
2 large, ripe Tomatoes (rinsed; seeded and roughly chopped)
16 ozs bowtie Pasta

Preparation steps

Place chopped basil and pine nuts into a food processor. Add about 1/3 of the olive oil and puree until smooth. Stir in the remaining oil, grated cheese, garlic and season to taste with salt and pepper.

Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 to 9 minutes. Drain pasta and mix well with the pesto. Add tomatoes and gently toss. Serve with grated Parmesan on the side.
