For the base
9 ozs Biscuit (e. g. digestives or butter biscuits)
0.333 cup almonds (peeled)
½ tsp ground cinnamon
cup butter
2 Tbsps brown sugar
For the filling
½ cup butter
1 ⅔ cups sweetened condensed milk
cup runny honey
3.333 cups cream cheese
2 Tbsps lemon juice
2 Banana (chopped)
For the topping
12 ozs white chocolate (for cooking)
cup cream
2 Banana (sliced)

Preparation steps

For the base, chop the biscuits, almonds and cinnamon in a food mixer to a medium crumb. Melt the butter and mix through the crumbs, together with the sugar. Press the mixture into the base of the tin, forming a crust around the edge. Transfer to the refrigerator to chill.

For the filling, melt the butter and add the condensed milk and honey. Bring to the boil and simmer for around 30 minutes, stirring, until the mixture is golden brown and caramelised. Leave to cool, stirring from time to time.

Stir the cream cheese until smooth. Drizzle the lemon juice over the just-chopped bananas and mash to a smooth purée with a fork. Stir into the cream cheese, together with the cooled caramel mixture. Spread over the base of the pie and smooth flat. Chill for at least 2 hours.

For the topping, place the chopped chocolate in a bowl. Bring the cream to the boil and pour over the chocolate. Stir until the chocolate is melted. Leave to cool. Chill for at least 30 minutes then beat until smooth and creamy.

Shortly before serving, take the pie out of the refrigerator. Release from the tin and transfer to a serving plate. Top with the banana slices, then spread the white chocolate cream over the top. Sprinkle with grated chocolate.
