1 cup double cream
¼ cup unsalted butter (softened)

1 ½ cups caster sugar
¼ cup Golden syrup
¼ cup water
½ tsp vanilla extract

Preparation steps

1.
Grease and line the base and sides of a 20 cm / 8” square baking tin with greaseproof paper.
2.
Combine the cream and butter in a large saucepan and cook over a medium heat until melted together. Set to one side and carefully stir together the sugar, Golden Syrup and water in a large saucepan until smooth and even.
3.
Cook the mixture without touching until it registers 132°C / 270F on a sugar thermometer. Remove the sugar syrup from the heat and carefully whisk in the cream mixture.
4.
Return the caramel to a medium heat and cook until it registers 118°C / 245F. Whisk in the vanilla extract and pour the caramel into the prepared tin.
5.
Leave the caramel to set for 2 hours or overnight.
6.
Lift the caramel out of the tin and cut into chews before wrapping in cellophane wrappers.
