1Cucumber finely sliced
1Fennel bulb finely sliced
1 cupfinely sliced Radish
1 cupArugula
¼ cupsolive oil
1 tablespoonChampagne vinegar
kosher salt to taste
freshly ground Black pepper to taste

Directions

1 In a large bowl add cucumber, fennel, radishes and arugula. Pour in olive oil and vinegar and season with salt and pepper. Toss gently until all well incorporated. Portion onto individual plates and serve.
