- 1 chicken (about 1.4 kg)
- Fleur de sel
- 100 milliliters Raspberry vinegar
- 3 centimeters fresh ginger
- 2 garlic cloves
- 300 grams Natural yogurt
- ½ tsp ground chili peppers
- 2 tsps sweet paprika
- ½ tsp
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- ½ tsp freshly ground peppers
- 1 generous pinch ground Turmeric
- 1 tsp ground Nutmeg
- ¼ tsp Red Food coloring (as desired)

Preparation steps
1.
Rinse chicken, pat dry, remove skin and divided into 8 equal parts. Arrange the chicken pieces on a plate, sprinkle with fleur de sel salt and raspberry vinegar and let sit about 1 hour.

Peel ginger and garlic and finely grate. In a large bowl, combine yogurt, all spices, and food coloring if desired. Add chicken and let it sit covered, overnight, in the refrigerator.
3.
Preheat the oven to 180°C (approximately 350°F).

Take the marinated chicken pieces from the sauce and place on a baking sheet lined with aluminum foil. Lightly score chicken pieces and bake in the oven for approximately 40 minutes.
5.
Occasionally brush extra marinade on the chicken pieces.
6.
Serve with rice, salad and lime wedges if desired.
