800 grams button Mushroom
3 shallots
2 garlic cloves
10 thin slices Bacon
1 Tbsp butter
4 Tbsps fresh parsley
Fat (for greasing)
200 milliliters Whipped cream (min. 30% fat content)
100 milliliters Chicken broth
salt

250 grams Gruyere

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse mushrooms, wipe with a damp cloth and cut larger mushrooms in half. Peel shallots and garlic cloves and chop finely. Cut bacon into strips and fry in butter for 2 minutes or until crispy. Rinse parsley and chop finely, reserving some for garnish. Mix mushrooms with bacon, shallots, garlic and parsley. Grease a baking dish, pour in mushroom mixture and season with salt and pepper. Pour in cream and broth. Bake in preheated oven for about 25 minutes. Meanwhile, finely grate cheese and sprinkle on casserole. Increase heat to 200°C (approximately 400°F) and bake for an additional 10 minutes. Remove, cut and serve garnished with reserved parsley.
