1 generous pinch salt
1 organic lemon (zested and juiced)
200 grams ground almonds (blanched)
200 grams Pastry flour
1 tsp Baking powder
1 Tbsp Ground cinnamon
powdered sugar (for dusting)

Preparation steps

Preheat the oven to 180°C (approximately 350°F) convection. Line a baking sheet with parchment paper.

Rinse the summer squash, trim and finely grate. Separate the eggs, whisk the egg yolks with 100 grams (approximately 1/2 cup) sugar, salt, lemon zest and lemon juice until fluffy. Whip the egg whites until foamy then continue beating, sprinkling in the remaining sugar, until stiff and glossy. Combine the ground almonds, flour, baking powder and cinnamon and fold into the egg yolk mixture until just combined. Fold in the grated squash then the egg whites. Fill the prepared baking sheet with batter, smooth the surface and bake for about 40 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let cool.

Sprinkle the cake with powdered sugar and cut into pieces before serving.
