1 ¼ cups all-purpose flour
¾ tsp baking soda
¼ tsp salt
2 Tbsps unsalted butter
¼ cup maple sugar (or light brown sugar)
2 large egg whites
3 very ripe Banana (mashed)
¼ cup Maple syrup
2 Tbsps apple sauce
½ tsp vanilla extract
½ cup chopped Cashews

Preparation steps

1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Place paper cases in a 12 hole muffin tin.
2.
Stir together the flour, bicarbonate of soda and salt.
3.
Beat together the butter and maple sugar in a mixing bowl until soft and light.
4.
Add the egg whites, mashed bananas, maple syrup, apple sauce and vanilla and beat well until blended.
5.
Add the flour mixture and stir until just combined. Stir in about half the cashews.
6.
Spoon into the paper cases and sprinkle the remaining cashews on top.
7.
Bake for 20-30 minutes until risen and golden. Place on a wire rack to cool completely.
