This is a light, healthy soup that is full of nutrients because of all the types of fruits found in it. 

You can substitute sugar for honey or maple syrup. This could be a dessert or served over a bowl of oats in the morning for a filling breakfast.

18 ozs Blueberries
18 ozs Plum
7 fluid ozs Orange juice
2 Tbsps cornstarch
4 Tbsps powdered sugar
1 Tbsp lemon juice
4 Tbsps Cashews
Ground cinnamon

Preparation steps

1.

Rinse and dry berries and set aside about 5 ounces of each kind of berries. Rinse plums, halve and pit, cut into pieces. Set aside about 7 ounces of plums.

Combine the rest of berries with orange juice, plums, and sugar. Bring to a boil and simmer for about 5 minutes. Puree and strain through a sieve. Bring to a boil again and sweeten with powdered sugar. Combine cornstarch with 1/4 cup of cold water and add to berry soup. Remove from heat, add berries and plums, set aside and refrigerate.

Season with lemon juice and sweeten to taste.

Pour into plates and sprinkle with cashew nuts. Sprinkle with cinnamon and serve.
